It’s time to fire up the grill. These beer-braised brats are simmered in beer before being finished over the flames on the Lodge Sportsman’s Pro Cast Iron Grill, giving them a deliciously smoky char.
Serve them in toasted buns with golden caramelised onions, grainy mustard and a hint of spice. It’s the kind of easy outdoor meal that’s made for warmer days, good company and cooking over an open flame.
Cook it in your Lodge Sportsman's Pro Cast Iron Grill
Ingredients

- 5 bratwurst sausages
- 4 cans (48 oz) light beer
- 5 hot dog buns
- 2 large yellow onions, thinly sliced
- 2 tbsp butter
- 1 tbsp brown sugar
- ½ tsp salt
- ¼ tsp black pepper
- ¼ tsp cayenne pepper
- 1 tbsp grainy mustard
Method:
1. Start on the stovetop.
Bring 4 cans of beer to a boil. Add the bratwurst, reduce the heat and simmer for about 10 minutes, until cooked through and puffed at the ends. Remove the brats and reserve ¼ cup of the beer.
2. Fire up the Sportsman’s Pro.
Place a 26 or 30cm cast iron skillet on the grill and preheat.
3. Caramelise those onions.
Melt the butter in the skillet, add the onions and cook, stirring occasionally, for 10–15 minutes.
4. Add the flavour.
Stir in the brown sugar, salt, cayenne and black pepper.
5. Keep cooking.
Cook for another 10–15 minutes, adding a splash of the reserved beer as needed. Continue until the onions are golden, glossy and beautifully caramelised. Stir through the grainy mustard and season to taste.
6. Get those brats on the grill.
Place the bratwurst directly on the Sportsman’s Pro grill grate and cook until nicely charred, turning as needed.
7. Build, gather and dig in.
Load up your buns with the brats and caramelised onions, then serve hot.
