Cheesy Spring Herb Skillet Scones

Add some spring flavour to your regular scones with this delicious recipe created by Brooke Neal.

INGREDIENTS

  • 4 cups flour
  • 5 tsp baking powder
  • 1 1/2 tsp salt
  • 1/4 tsp cayenne pepper
  • 150g melted butter
  • 3 cups Tasty grated cheese
  • A bunch of fresh herbs, leaves chopped
  • Milk to mix, plus extra to glaze (450 mls approx.)
  • Grated parmesan to top

METHOD

Preheat oven to 190C Fan bake. Butter the inside of your cast iron pan & set aside.

Into a large mixing bowl, sift flour, baking powder, salt & cayenne. Add in the melted butter, cheese & herbs, folding it through with a wooden spoon. Slowly pour in the milk, bringing the dough together. Take care to not overwork.

Flour the bench, turn dough out, pat it down to a 20cm circle & cut into 8 equal wedges. Glaze with milk using a pastry brush & top with parmesan. Transfer the dough to your buttered skillet & bake until golden brown (approx. 40 mins.) Remove from the oven & let the scones cool in the skillet. Enjoy warm with lashings of butter.

Note, you can play with the flavour combinations in this recipe. Halloumi & dill, feta & spring onion, rosemary & peppercorn cheddar etc. This is a simple and versatile base recipe to work with, that suits practically any flavours.

Spicy Chili Scrambled Eggs

INGREDIENTS:

  • 4 free range eggs
  • 2 tsp chili garlic sauce
  • ¼ tsp fresh minced ginger
  • 2 tsp sesame oil

GARNISHES:

  • 1 spring onion, sliced
  • 1 tbsp spicy kimchi
  • Thinly sliced Cucumber
  • Chili Oil

METHOD:

  1. In a medium-sized bowl, combine the eggs, chili garlic sauce, and freshly minced ginger. Whisk the mixture until well combined.
  2. Heat the sesame oil in a Lodge Cast Iron Skillet over medium heat.
  3. Pour the egg mixture into the skillet and let it cook without stirring until it begins to set.
  4. Using a silicone spatula, gently scramble the eggs by pushing them from the outside in. Continue working the eggs until they are just cooked and slightly creamy.
  5. Divide the scrambled eggs between plates.
  6. Garnish the scrambled eggs with sliced spring onion, a tablespoon of spicy kimchi, thinly sliced cucumber, fresh coriander, and a drizzle of chili oil.
  7. Serve immediately and enjoy your delicious Spicy Chili Scrambled Eggs!
