Lamb and Whipped Feta Burger by Cooks on Fire Season 2 Winners Matt and Heather Flanagan

This delicious yet simple burger is full of flavour, crafted by BBQ experts Matt and Heather Flanagan, the talented winners of TVNZ's Cooks on Fire Season 2. Known for their exceptional grilling skills, Matt and Heather designed this burger to bring out bold, rich flavours in every bite. Using a Lodge 16cm Cast Iron Burger Press, each patty is perfectly formed and cooked to perfection, making this recipe a true winner in any kitchen.

INGREDIENTS

  • 720g ground lamb
  • 1 teaspoon cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon chilli powder
  • 100g creamy feta cheese
  • 125g cream cheese
  • Iceberg lettuce
  • Tomato
  • Sliced beetroot
  • 4 Kaiser Rolls (or your favourite burger bun)

METHOD

CHEESE MIX

  1. In a bowl add the cream cheese and feta
  2. Mix well with a fork until it forms a creamy paste

We recommend warming the cheeses prior to mixing. This will help soften them and make mixing a lot easier. You can do this in the microwave or oven, or if you’re using a charcoal barbecue, heating it up in the barbecue will give the cheeses a great smokey flavour.

Once mixed, set aside on a bench top

LAMB PATTY’S

  1. In the second bowl add the ground lamb, cumin, ground coriander, smoked paprika, garlic powder, onion powder, salt and chilli powder and mix thoroughly.
  2. Take a handful of your ground lamb mix and shape into a ball (around 180g is a good size patty. 720g of ground lamb will give you 4 patties’ at 180g each.)
  3. Preheat your hotplate or pan.
  4. Once hot, place your ground lamb balls on the hotplate or in your pan.
  5. Using the Lodge 16cm Cast Iron Burger Press, slowly push down on the burger until the outer lip of the press just touches the hotplate or pan. Gently lift the press directly up, revealing your lamb patty. Repeat the process until all your patties are pressed.
  6. Cook until the underside is golden brown with a slight crust, flip the patty once and leave until cooked.
  7. Once cooked, remove patties from the hotplate or pan and get ready to assemble a delicious burger.

BURGER ASSEMBLY

  1. Place your lamb patty on the bottom half of your bun
  2. Top with chopped lettuce, tomato slices and slice beetroot.
  3. Spread the inside of the top half of your bun with a healthy dollop of your whipped feta mix.
  4. Place the top half of your bun on the burger.
