Bring a diner-style breakfast to your own kitchen. The secret? Before you hit the griddle, soak your potatoes in a saltwater mixture to help them develop the perfect crispy, crunchy crust. Then add your favorite toppings - cheese, onions, jalapeños, bacon bits, etc.

1 large russet potato

4 tablespoons salt

2 cups water

2 tablespoons vegetable oil
METHOD
1. Mix salt and water in a large bowl.
2. Peel the potato and then shred with a cheese grater.
3. Add potatoes to the saltwater mixture for one minute, remove from the water, and place in a bowl lined with a clean dish towel.
4. Using the dish towel, squeeze as much moisture out of the potatoes as possible.
5. Heat a large skillet or griddle over medium heat for 5 minutes. Add 2 tablespoons oil and scatter the potatoes into two portions. Flatten the potatoes to create as much contact with the skillet.
6. Cook for 4-5 minutes undisturbed. Flip and cook another 4-5 minutes.
7. Top with your preferred toppings and serve!
