Add some kick to your sliders by combining ground beef with chorizo, then top with homemade chipotle mayo and fresh avocado smash for a crowd pleasing main or appetizer. Enjoy with a couple of good friends and a cold beer!

INGREDIENTS:

  • 225g lean minced beef
  • 225g chorizo (good quality raw sausages out of their casing can be used)
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • ¼ teaspoon garlic powder
  • 6 slider buns
  • sliced jalapeno, for garnish
  • ½ cup mild feta or salted paneer, for garnish (trying to recreate queso fresco)

Avocado Smash:

  • 1 avocado, cut into 1cm cubes
  • ¼ cup coriander, chopped
  • 1 small white onion, chopped
  • 1 jalapeno, seeded and chopped (or use 4-5 brined to taste)
  • 1 tomato, seeded and chopped
  • 1 clove garlic, crushed
  • 1 teaspoon lime juice
  • salt and pepper to taste

Chipotle Mayo:

  • ¼ cup mayonnaise
  • 1 chipotle pepper in adobo sauce
  • 1 teaspoon lime juice
  • sprinkle of salt and pepper

METHOD:

  1.  Mix beef and chorizo together until well incorporated.
  2. Portion mixture into 6 equal patties, season with salt, pepper, and garlic powder. Refrigerate while you prep the rest of the ingredients.
  3. Mix mayo, chipotle pepper, and lime together, and season with salt and pepper. Set aside.
  4. In a small bowl, mix avocado smash ingredients together until just combined. You’ll want to keep it on the chunky side. Set aside.
  5. Preheat square grill pan over medium-high heat for 5 minutes.
  6. Oil the grill pan and sear patties in batches for 3-5 minutes per side, until cooked through.
  7. While the patties are grilling, oil the cut sides of the slider buns and set aside.
  8. Once the patties are done, grill the buns for 30 seconds and remove from the grill pan. Be careful not to overdo it.
  9. Assemble sliders: bun, chipotle mayo, patty, avocado smash, a little white cheese, sliced jalapeno, bun.
