Add some kick to your sliders by combining ground beef with chorizo, then top with homemade chipotle mayo and fresh avocado smash for a crowd pleasing main or appetizer. Enjoy with a couple of good friends and a cold beer!
INGREDIENTS:
- 225g lean minced beef
- 225g chorizo (good quality raw sausages out of their casing can be used)
- 1 teaspoon salt
- 1 teaspoon pepper
- ¼ teaspoon garlic powder
- 6 slider buns
- sliced jalapeno, for garnish
- ½ cup mild feta or salted paneer, for garnish (trying to recreate queso fresco)
Avocado Smash:
- 1 avocado, cut into 1cm cubes
- ¼ cup coriander, chopped
- 1 small white onion, chopped
- 1 jalapeno, seeded and chopped (or use 4-5 brined to taste)
- 1 tomato, seeded and chopped
- 1 clove garlic, crushed
- 1 teaspoon lime juice
- salt and pepper to taste
Chipotle Mayo:
- ¼ cup mayonnaise
- 1 chipotle pepper in adobo sauce
- 1 teaspoon lime juice
- sprinkle of salt and pepper
METHOD:
- Mix beef and chorizo together until well incorporated.
- Portion mixture into 6 equal patties, season with salt, pepper, and garlic powder. Refrigerate while you prep the rest of the ingredients.
- Mix mayo, chipotle pepper, and lime together, and season with salt and pepper. Set aside.
- In a small bowl, mix avocado smash ingredients together until just combined. You’ll want to keep it on the chunky side. Set aside.
- Preheat square grill pan over medium-high heat for 5 minutes.
- Oil the grill pan and sear patties in batches for 3-5 minutes per side, until cooked through.
- While the patties are grilling, oil the cut sides of the slider buns and set aside.
- Once the patties are done, grill the buns for 30 seconds and remove from the grill pan. Be careful not to overdo it.
- Assemble sliders: bun, chipotle mayo, patty, avocado smash, a little white cheese, sliced jalapeno, bun.
